Multigrain Bread For The Bread Machine
I have talked before about my love affair with homemade bread.
My very first blog post EVER was a recipe for the bread machine and this pillowy Buttermilk Yeast Bread has been know to send friends and family to their knees when I serve them a slice slathered in butter and honey. It is that good.
As much as I love both those recipes, I have been looking for a really good, really easy recipe for multigrain bread. The chewy, almost nutty texture of whole grains is a favorite of mine, but I didn’t want to have to spend the money and purchase multiple kinds of flour that I may not use for anything else. Years ago, I had seen a recipe using a 7-grain hot cereal mix to make bread and I never forgot about it! A few months ago, I started searching and testing recipes, and several loaves of bread later, I FINALLY have the perfect version!
This is one of the easiest bread machine recipes you will ever make. There is no soaking of grains and no extra steps; the ingredients are just dumped in. It makes fantastic sandwiches, but toasted with butter and jam is nothing short of beautiful. Crusty and chewy on the inside and oh. my. GOSH! My Mom used to make homemade bread when I was a kid and we had hot bread as a bedtime snack on nights when we sat up and watched movies. With my kids, it is more likely that they will have it as an after school snack, opening the door to the scent of freshly baked bread. Either way its a memory that I hope always makes them think of home.
I would love to share with you too! I’ll keep the butter and honey pot on standby. 🙂
Multigrain Bread For The Bread Machine
Recipe adapted from Betty Crocker
This recipe makes a 2 lb loaf. In the market for a bread machine or want to add it to your Christmas wishlist? Try this one!
1 1/2 c water
2 T coconut, canola, grapeseed, or vegetable oil
1 1/2 c bread flour or all-purpose flour
1 1/2 c white whole wheat flour, whole wheat pastry flour, or whole wheat flour
1 c 7-grain hot cereal (uncooked) such as Bob’s Red Mill brand
1/4 c brown sugar or honey
1 1/2 tsp salt
2 1/2 tsp bread machine yeast or 1-.25 oz packet
Place all ingredients in your bread machine according to manufacturers directions. Choose the 2 lb, whole wheat or standard loaf setting and I recommend the light or medium crust option if you have the choice. The whole wheat tends to really darken and you don’t want it to burn. This bakes up great on standard or rapid baking times. Remove to a cooling rack as soon as it is done and TRY not to cut into it until it has cooled a bit!
This looks so good! Honey and butter, yes please!
🙂 Thank you!
Love your blog
Oh! Thank you so much!
Hi we have tried this bread twice, both times amazing but it always sinks in the top. It doesn’t impact the taste but just curious if you have any suggestions what we missing. Thanks!
I am so glad you like the recipe, Bonnie! The sinking in the middle of the loaf could be several things. If your bread machine isn’t beating out the air after it does the first rise, it may always leave a large bubble in it. If this is the case, there is nothing you can do, but make it by hand. If you are using all purpose flour instead of bread flour (which is usually just fine) it might be rising, and then unable to hold its shape and falling. This is a hearty bread so if you aren’t already, try using bread flour and see if that fixes it. If the bread it rising great and THEN falling, it also may be too much yeast for your ingredients. You could try decreasing the amount of yeast by a half teaspoon or so and trying again. Bread can be funny sometimes!
Thank you so much for the question! Hope this helps!
This is exactly the bread recipe I’ve been wanting to find! I used Bob’s Red Mill Flour and cereal and turned out beautiful. This one is a keeper!
I’m so glad you love it as much as we do, Ruth!! 🙂
Can this recipe make a1 1/2 pound bread please let me know can you give me recipe thanks
I’m trying this tonight! Question: if I were to add some seeds – maybe flax or sunflower – would that mess the recipe up? Let me know if you’ve tried it.
It should still bake up just fine, Sarah. As long as you don’t add TOO much. 🙂
Hi this looks wonderful. I’m going to try to make it today. Would you have nutrition info on this? Also I bought bobs 10 grain cereal is that ok to use.
Made this today….perfect. Used vegetable oil, honey,, all purpose flour, reg. whole wheat flour. I used the dough setting on the bread maker, then shaped the bread by hand….it didn’t fall.. Red Mill 5 grain cereal…a beautiful loaf…I was going to take a picture, but cut it before I thought….my go to whole wheat bread……thanks.
So glad you loved it as much as we do! 🙂
I use a Zojirushi beard machine and all of the recipes call for 5 cups of flour. I notice that you also use this bread machine but your recipe only calls for 3 cups of flour. I am curious because I am always looking for bread machine recipes that call for this much flour
Hmmm. My bread machine makes several different sizes of loaves of bread. It will make dough and it will do a 1 lb loaf and a 2 lb loaf. Maybe that is the difference? Also, flours with more whole grains absorb moisture differently so that will make a difference as well! 🙂
trying this recipe with 2 tbsp of dry milk added, just curious to see how it turns out
Delicious! Wonderful crusty, great flavo, very easy to make !
Thank you for sharing
I made this bread today and, it was outstanding – perfect in every way!
[…] recipe came from Brittany’s Pantry, I found it on Pinterest. Let me just say, it is […]
This recipe actually prompted me to finally bite the bullet and buy a bread machine! Can’t wait to make this!!
What modifications do I need for making without a bread machine?
Is the yeast instant?
Hi I have Bob’s red mill 14 grain cereal. Could that be used in this recipe instead of the 7 grain and would there be any adjustments? Thanks
How many carbs and fibre per slice? Thanx
This bread is fabulous!!! I used walnut oil, as I had it on hand.
This is in my bread machine right now – using the dough cycle. I melted 2 tbsp butter into the warm water just to see how it turns out. After it rises in the pan I’m gonna give it an egg wash and liberally sprinkle it with sesame seeds. Oh and I’m using Bob’s Mill 5 grain cereal as that’s what we had in our local stores. Oh! And I used Truvia brown sugar to cut the sugar down. I’m diabetic and trying to eat healthier without going overboard. I’ll post a pic after it bakes. Thank you so much for this! 💜😳💜
