Chocolate Fluffernutter Sandwich Treats that are perfect for Independence Day!  Super easy and a great kid activity too! {Brittany's Pantry}As the summer progresses, I find myself wishing my kids were a bit more self sufficient.

I may be doing too much for them and I have decided to try and incorporate more age appropriate chores into their routine.  As you can probably imagine, they are thrilled.  Is anyone else struggling with responsibility and their kids?  Laundry folding, simple food prep, emptying the dishwasher; that kind of thing.  They are doing great so far, but they really really want to be more help in the kitchen.  My nine year old, Evelyn, has graduated to making pancakes all on her own and is getting more and more comfortable with the gas stove.  Eli, who is 6, is a master at making peanut butter and jelly sandwiches and making sure everyone has milk poured into their cereal.  Lane, our three year old bundle of spiciness, just wants to be where everyone else is and make a giant mess.  Pretty normal for a toddler.

But these treats, which will grace our Fourth of July BBQ buffet this year, is the perfect task for all three.  Regardless of how neat or how messy they turn out, they will taste amazing.  There is nothing to cook, and the most dangerous utensil is a butter spreader.  What my kids find fascinating about it is that we can change up the sprinkles to suit any occasion.  Birthday themes, Christmas, or even NO sprinkles (God forbid…) on just a Saturday night.

My point is, if you have a ridiculous amount of stuff to do this weekend, why not give this recipe to your kids and say “Go to it!”  It can only end in fun.  And who knows?!  Maybe they will starting bringing you pancakes and peanut butter and jelly sandwiches in bed!

Quick Korean Beef

Quick Korean Beef via Brittany's PantryAaaah!  I’m back!  Between moving to the new house and the loss of all electronics (including internet), I have returned with an arsenal of incredible recipes to share with you!

First on the list this summer is this Korean Beef.  Oh. My. Lanta.  This is good.  And I mean, really good. My kids inhale it and my guests devour it. It has incredible flavor with just a few ingredients and you can make the whole she-bang in about 20 minutes.  Tops.  Is that not a beautiful thing?  Its a beautiful thing.  Pictures of the new house (and my new kitchen), coming soon. 🙂

Adapted from The Girl Who Ate Everything
I have been meaning to try this with honey instead of brown sugar, but haven’t yet.  Let me know if you give it a go!

1-1.5 pounds of lean ground beef (I err on the side of more…)
1 small onion, or half of a large onion, diced small
1/4 c brown sugar
1/4 c low sodium soy sauce
1 T sesame oil
1 heaping tsp of gated fresh ginger
3 cloves garlic, minced
large pinch of dried red pepper flakes
cooked brown rice for serving
green onions or parsley for garnish, if desired

In a small liquid measuring cup, combine the sugar, soy sauce, oil, ginger, garlic, and red pepper flakes.  Set aside.  In a large skillet, brown the beef and the onion together until cooked through.  Drain off excess fat if necessary.  Over medium low heat, add the sauce mixture and stir well, heating until it coats the beef and evaporates a bit.  Serve over brown rice and garnish with green onions or parsley.

Sunrise-Brittanys-PantryHello my friends!  My sincerest apologies for my lack of posts and recipes lately.  There are several issues keeping me from blogging lately, and I have snuck out of the house to post a new Currently update.  Hopefully, it clears things up a little…

Joyful…about the sunrises here in South Carolina.  More often than not, they are breathtaking.

Eating…the frosted lemonades at Chik Fil A.  They are creamy, tangy, and feel OH so fantastic on my throat!

Needing…the get my tonsils removed.  Hence, the above mentioned frosted lemonades.  Have any of you gotten your tonsils removed as an adult?  I am NOT looking forward to it.

Reading…quite a bit actually.  But I just finished Snow Flower And The Secret Fan by Lisa See and it was exceptional.  If you love historical fiction and enjoy reading about other countries, this book is for you.9780812968064_p0_v6_s600Aggravated…by the total lack of Internet at my house.  I have had no wifi (zip, zilch, nada, nien, negative) for a month now.  Even my data signal is patchy and unreliable.  Needless to say, this is a big part of my blogging silence.  This unplanned hiatus is very frustrating and while I would like to say the end is in site, I have reservations.  One of the bummers of moving to the middle of nowhere, I guess, but come ON!  I should also mention that I am typing this while sitting in the corner of a public restaurant.  Free WiFi is da bomb.

Excited…for several things.  Summer vacation started here yesterday but also, my sister is moving from the West coast to the East coast and will be staying with us for awhile.  I canNOT wait to see her!

Unwrapping…all of my worldly possessions.  Our family moved into our newly finished dream home and I have been unpacking like crazy.  Paper everywhere.  Boxes everywhere.  Stuff everywhere.  How did we end up with so many ‘things?’

Discovering…just how much I miss writing when I can’t do it on a regular basis.

Praying…for several friends who are battling cancer right now. *sigh* I hate cancer.

Loving…having access to all my cookbooks again!  And my kitchen aid.  And my knife block.  And my immersion blender…

Working…on taking better care of myself.  So many of us Moms have this problem and I am no exception.  Trying really hard to put myself first once in awhile.
